Brussels Sprouts with White BBQ Sauce- Sunflower Seeds and Feta

  • 1 Pound- Fresh Brussel Sprouts
  • To Drizzle-Olive Oil
  • To Taste-Chef Troy’s Spice Mix
  • ¼ Cup-Sunflower Seeds
  • ½ Cup-Feta Cheese-crumbled
  • To Taste-BBQ Rub-your favorite

White BBQ Sauce

  • 1/4 Cup-Cider Vinegar
  • 1 Cup-Mayonnaise
  • 1 Tablespoon-Honey
  • 1/4 Teaspoon-Black Pepper
  • 2 Cloves-Garlic-smashed into a paste with the back of a chef knife
  • 1 Teaspoon-Cayenne/Chipotle Pepper
  • 1/2 Teaspoon-Kosher Salt

Directions

  1. Combine all ingredients for bbq sauce until well incorporated and place in refrigerator, best if done day before.
  2. Preheat oven to 425 degrees.
  3. Halve Brussels sprouts and discard any discolored leaves.
  4. To brussel sprouts with just enough oil to coat, about 2 tablespoons.
  5. Toss with Spice Mix and place on a baking sheet.
  6. Place in oven and set timer for 8 minutes.
  7. When timer goes of rotate pan and set timer for an additional 8 minutes.
  8. Check for preference for doneness, if done, turn off oven and leave door cracked while making brown butter
  9. Remove Brussels sprouts from oven and place in a mixing bowl.
  10. Add just enough bbq sauce to lightly coat.
  11. Toss with bbq sauce, plate, garnish with sunflower seeds and feta cheese.
  12. Drizzle with extra bbq sauce if needed and dust with bbq rub to taste.
