Sloppy Joe Tater Tot Casserole

  • 2 Pounds-Ground Beef
  • 1-35 Ounce Can-Tomato Sauce
  • 1 Cup-Ketchup
  • 3 Tablespoons-Red Wine Vinegar
  • 2 Teaspoons-Garlic Powder
  • 1 Teaspoon-Onion Powder
  • 2 Teaspoons-Paprika
  • To Taste-Salt/Black Pepper
  • 1 Tablespoon-Yellow Mustard
  • 1 16 Ounce Bag-Frozen tater tots
  • 1 ½ Cups-Cheddar Cheese-shredded

Directions

  1. Preheat oven to 425 degrees, spray a sheet tray with pan spray.
  2. Warm a large non-stick pan over medium heat and add ground beef.
  3. Start browning meat, breaking up into small pieces.
  4. While ground beef is browning, place frozen tater tots on sheet tray, place in the oven and cook for 12 minutes.
  5. Remove meat and drain in a colander while preparing sauce.
  6. In a mixing bowl combine sauce, ketchup, red wine vinegar, spices and mustard.
  7. Place drained meat back in non-stick pan, over medium high heat and add sauce.
  8. Add sauce, mix to combine and bring to a simmer.
  9. Spread sloppy joe mixture into one layer and top with half of the cheese.
  10. Place tater tots on top of cheese in one layer.
  11. Top tater tots with remaining cheese and place back in oven to melt cheese and brown tater tots, 10 to 12 minutes.
