Smashed Black Bean Taquitos with Jalapeno-Avocado Crema

  • 16-6”-Corn/Flour Tortillas
  • 3 Cups-Prepared Black Beans {see recipe below}
  • 8 Ounces-Cheddar Cheese-shredded
  • To Taste-Iceberg Lettuce-thin sliced
  • To Taste-Roma Tomato-stem, seeds removed, diced
  • To Taste-Avocado-Chipotle Crema
  • To Taste-Manchego Cheese-grated
  • To Taste-Cilantro
  • To Taste-Lime Wedges

Directions

  1. Prepare black beans according to recipe.
  2. Allow to cool slightly and smash with a potato masher, but not into a paste.
  3. Preheat oven to 425 degrees.
  4. Warm tortillas in a dry skillet/pan over low heat, 30 seconds per side and place in a clean kitchen towel.
  5. Lay a warm tortilla out on a cutting board and add 3 tablespoons of black beans on one side of the center.
  6. Smear across tortilla in a line and top with cheddar.
  7. Roll up, place on a pan-sprayed sheet tray, repeat with remaining tortillas/black beans/cheese.
  8. Place in oven and bake until crisp, golden and gooey, about 15 minutes.
  9. Remove, top with manchego cheese, lettuce, tomato, crema

 

Black Beans

  • 3 Tablespoons-Olive Oil
  • ¼ cup-White Onion-fine dice
  • 1 Each-Jalapeno Pepper-stem/seed removed, fine dice
  • 1 Clove-Fresh Garlic-smashed, chopped fine
  • 2-15 Ounce Cans-Black Beans-rinsed/drained
  • 1 Teaspoon-Ground Cumin
  • ½ Teaspoon-Crushed Red Pepper
  • To Taste-Kosher Salt/Black Pepper
  • 3 Cups-Water

Directions

  1. Warm oil over medium high heat.
  2. Add onion, jalapeno and cook to soften, 2-3 minutes.
  3. Add garlic, stir to incorporate and add beans.
  4. Add cumin/salt/pepper, stir and add water.
  5. Bring to a simmer, lower heat and cook for 15-20 minutes.
  6. Remove from heat, keep warm by covering with a lid.

Jalapeno-Avocado Crema

  • 4 Each-Tomatillos-skin remove, rough chopped
  • 1 Each-Avocado-flesh remove, skin/seed discarded
  • 2 Tablespoons-Lime Juice
  • ½ Cup-Cilantro-leaves shaved from bunch
  • 1 Each-Jalapeno-stem/seeds removed, fine diced
  • 1 Each-Green Onion-fine diced
  • ¼ Cup-Water
  • To Taste-Kosher Salt/Black Pepper

Directions

  • Place all ingredients in blender and process until smooth and creamy.
