Sun-Dried Tomato & Garlic Hummus

  • 8 Ounces-Olive Oil
  • 2 Ounces-Fresh Garlic-rough chopped
  • 6 Ounces- Sun-Dried Tomatoes
  • 16 Ounces-Garbanzo Beans-drained
  • 2 Tablespoons-Lemon Juice
  • 2 Tablespoons-White Vinegar
  • To Taste-Kosher Salt/Black Pepper

Directions

  1. Place olive oil and chopped garlic in sauté pan.
  2. Place over high heat until oil begins to boil.
  3. As soon as oil begins to boil remove immediately from heat and place in the refrigerator until completely cooled.
  4. While oil is cooling, rough chop sun-dried tomatoes and place in the food processor.
  5. To food processor add garbanzo beans, lemon juice, vinegar, salt and pepper.
  6. Once garlic is cooled also add to food processor with other ingredients and start processor.
  7. Stop processor periodically to scrape sides and bottom of bowl and process until smooth.
  8. Store in a covered container for at least four hours in refrigerator before serving, will keep for several days.
  9. Serve with grilled bread or crackers.
