Toasted Pimento Cheese Sandwich

  • Slices of Sour Dough Bread
  • Unsalted Butter-soften to room temperature

Pimento Cheese

  • 2 Cup-Sharp Cheddar Cheese-grated (8 ounces)
  • 3/4 Cup-Dukes Mayonnaise
  • 2 Each-Green Onions
  • 3 Tablespoons-Pimento Peppers/Piquillo Peppers/Roasted Red Peppers-chopped


  1. For pimento cheese, mix until all ingredients are completely incorporated.
  2. Place in refrigerator for at least 3 hours and up to 5 days.
  3. Warm an non-stick pan over medium heat.
  4. Butter one slice of bread, flip over {holding up} and spread on a layer of pimento cheese.
  5. Place in warmed pan, butter a second slice of bread and place on top of pimento cheese butter side up.
  6. Cold until golden on both sides, remove and let rest at least five minutes before serving.
