Bacon wrapped Meatloaf Medallions with Country Ham Gravy

  • 2 Tablespoons-Extra Virgin Olive Oil
  • ¼ Cup-Onion-diced
  • 1 Each-Poblano-seeded, chopped fine
  • 8 Ounces-Crimini Mushroom-chopped
  • 2 Each-Garlic-smashed into paste
  • 2 Each-Eggs-beaten
  • 3 Tablespoons-Worcestershire Sauce
  • 1 Tablespoons-Hot Sauce
  • 1 Cup-Ketchup
  • To Taste-Kosher Salt/Black Pepper
  • 1 Pound-Ground Beef
  • 1 Pound Ground Pork
  • 2 Cups-Panko Bread Crumbs
  • 10 Slices-Bacon-thick sliced
  • 1 Recipe-Country Ham Gravy-recipe below


  • 1 Cup-Ketchup
  • 2 Tablespoons-Bourbon
  • 1 Tablespoon-Balsamic Vinegar
  • ½ Teaspoon-Black Pepper


  1. Warm oil over medium high heat in a sauté pan and add onion, poblano and mushrooms.
  2. Cook, stirring frequently, until onions are translucent and mushrooms reduce in size by half, 6-8 minutes.
  3. Add garlic, cook another minute, remove from heat and cool.
  4. In a mixing bowl combine eggs, Worcestershire, hot sauce and ketchup.
  5. Preheat oven to 325 degrees.
  6. In a separate bowl add pork, beef, breadcrumbs, cook/cooled vegetable mixture, egg mixture and season.
  7. Mix by hand until well combined, divide in half and roll into two logs about 3 inches in diameter.
  8. Line five slices of bacon on a sheet of foil paper large enough to wrap loaf.
  9. Repeat with remaining five slices of bacon on a separate piece of foil paper.
  10. Roll bacon over loaf, cutting off any excess after overlap.
  11. Combine ingredients for sauce and brush each loaf with about a ¼ cup.
  12. Roll foil around loaf keeping form of loaf, place on a sheet tray and cook in oven and cook for30 minutes.
  13. Lower heat to 225 degrees.
  14. Remove loaves/foil, draining off excess grease and place back on sheet tray.
  15. Brush with sauce and place back in oven just long enough to crisp bacon, 12-15 minutes.
  16. Baste with remaining sauce every 5-10 minutes.
  17. Remove loaves, slice into medallions and serve topped with gravy.

Country Ham Gravy

  • ¼ Cup-Country Ham-chopped fine
  • 2 Tablespoons-Unsalted Butter
  • 1 Tablespoon-All Purpose Flour
  • 2 Cups-Ham Stock-chicken, vegetable or water


  1. Cook ham in pan over medium high heat until starting to brown, remove and set aside.
  2. Melt butter in same pan over medium high heat, add flour and whisk to combine.
  3. Add stock, whisk together and cook until gravy just starts to thicken, 3-5 minutes.
  4. Gravy should be thin with a little body, not thick.
