Shisito Peppers with Grilled Lemon Aioli

  • ½ Pound Shisito Peppers-rinsed/dried
  • To Coat-Blended Oil
  • To Taste-Kosher Salt/Black Pepper
  • 1 Each-Lemon-halved
  • 2 Cups-Dukes Mayo
  • 1 Tablespoon-Parsley


  1. Place lemon on hot grill/grill pan cut side to char, 2-3 minutes.
  2. Allow lemon to cool completely in refrigerator.
  3. Squeeze lemons, catching seeds, and place in food processor.
  4. Add mayo, parsley and a pinch of salt/pepper.
  5. Process to combine, place in a covered container and refrigerate {best if made day before}.
  6. Light oil peppers, very light, and season with salt and pepper.
  7. Reheat grill pan or keep grill on and add peppers.
  8. Cook to slightly charred on all sides.
  9. Remove and served with chilled lemon aioli.
