Texas Toast-Cheesy Patty Melt

  • 1 Medium-Sweet Onion
  • 2 Tablespoons-Olive Oil
  • 1 Pound-Ground Beef {80/20}
  • 1 Tablespoon-Chef Troy’s Spice Mix
  • 3 Tablespoons-Ketchup
  • 4 Slices-Havarti Cheese-thin slice
  • 4 Slices-Cheddar Cheese-thin slice
  • 8 Slices-Texas Toast
  • To Coat-Dukes Mayo


  1. Warm a non-stick pan over medium heat, add butter and melt.
  2. Add onions, toss to coat and cook, lowering the heat if necessary, until soft and golden {4-5 minutes}.
  3. Remove from and allow to cool.
  4. Combine ground beef with Spice Mix/ketchup and divide into 4 equal portions.
  5. For each portion into a ball.
  6. Wrap to medium size plates with plastic wrap.
  7. Place one ball at a time in one plate and flatten with the bottom of the other plate.
  8. Patties should be about ¼” thick.
  9. Heat a griddle or skillet to medium high heat and add patties, working in batches if necessary.
  10. Sear for about 2 minutes, flip and repeat, patties should still be a little pink in center.
  11. Remove from pan, set aside on a plate and lower heat in pan to medium heat.
  12. Smear mayo on one side of each piece of bread.
  13. Place on griddle or pan {working in batches if needed} mayo side down.
  14. Top each piece with a piece of havarti cheese, top with onions and a patty.
  15. Top each patty with a piece of cheddar and a second piece of bread {mayo side up}.
  16. When golden brown flip patty melt over and cook to golden brown.
  17. Remove from pan, allow to rest for about 5 minutes, cut in half and serve.
